Inspired by his grandmother, Queen Pauline Jones, and his father, Chef Tony D. Allen, Chef TJay developed a culinary perspective grounded in care, generosity, and soulful flavor.
His path includes fine kitchens in Houston and Charlotte, while his own style brings together Gulf Coast warmth, Low Country influence, Creole Soul, and polished presentation.
